Strawberry Bacon & Brie Grilled Cheese
A rich and flavorful grilled cheese with strawberries and brie.
  1. In a small saucepan on medium heat, add balsamic vinegar, cayenne pepper and honey. Stir mixture with a wooden spoon until the honey and vinegar is combined. Lower heat to a medium low and allow to simmer for about 20 minutes. Stir the mixture well every 5 minutes. Allow to cool for 10 minutes.
  2. Cut strawberries horizontally into quarter inch slices.
  3. Lay down two pieces of the peasant bread. Slice the brie wedge length wise into four equal portions. Lay two slices of brie onto each slice of bread. Top the cheese with fresh torn basil and drizzle with the balsamic reduction to taste.
  4. Place a few sliced strawberries evenly on top of the basil and brie.
  5. Place two slices of cooked bacon lengthwise on top of the strawberries.
  6. Place the remaining slices of bread on top of each sandwich. Carefully spread butter on each side of the sandwiches and place on a griddle set to medium heat. Place the brie side down first. This will allow the cheese to melt better. Heat for about 3 minutes or until browned.
  7. Carefully flip over the sandwich with a spatula and brown the opposite side.
  8. Carefully remove grilled cheese from heat and serve hot.
