Breakfast burritos are one of my favorite breakfast foods. These burritos are stuffed with a bunch of ooey gooey cheese, chorizo, tater tots and more! One can even substitute fillings with bacon, breakfast sausage or seasoned tofu using this base recipe. I hope this recipe gives one the fuel to kick start and conquer the day!

Ingredients
- 4 flour tortillas If using burrito sized tortillas, this recipe will only produce two burritos.
- 2 chorizo sausages, diced casing removed
- 1/3 cup shredded cheddar
- 2 large eggs scrambled
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 4 tbsp extra-virgin olive oil
- 1 & 1/2 cups tater tots
- 1/4 cup salsa
- 1/2 avocado, diced
- jalapeños use pickled and garnish to taste.

Instructions
- In a large skillet set to medium heat, add extra-virgin olive oil, pepper and onions. Cook for 7 minutes and add chorizo. Cook until chorizo is browned and vegetables are softened. Set aside and keep warm.
- In a small skillet set to low heat, scramble two large eggs. Salt and pepper to tastes. Set aside and keep warm. Be careful not to dry out the eggs.
- Arrange topping on a kitchen surface to begin assembling the burritos. Microwave tortillas for 30 seconds so they are more pliable.
- Start assembling the burritos. I recommend starting with the chorizo, salsa, peppers and onions and saving the tots for last. Be very careful not to overstuff the burrito as it will be hard to roll. Place rolled burritos on a plate seam side down.
- In a large skillet set to medium heat and use non stick spray. Place burritos in the skillet starting with the seam side down. Heat until browned, flip and repeat the process.
- Serve burritos hot and enjoy!
