Recipe: Turkey Fajitas

Turkey fajitas are very easy and cheap to make.  All one needs is a few vegetables, spices and flour tortillas.  I utilized leftover turkey from a holiday to create this tasty meal.  Fajitas are super healthy too.  Theres plenty of vitamin c in the bell peppers, in fact 1 red bell pepper has a whopping 3 times the vitamin c of an orange! Recipe: Turkey Fajitas
A flavorful turkey fajitas recipe thats simple, fresh and delicious!
  1. On a cutting board, slice peppers lengthwise and onions as shown in the picture.
  2. In a large skillet set to medium heat, add extra-virgin olive oil, and peppers. Sautée for 10 minutes. Now add the onions and sautée for an additional 10 minutes till peppers and onions are soft. Cover and set aside.
  3. In a large skillet set to medium heat, add turkey drippings (allow to heat) and spices. Heat spices until fragrant. Add in chopped turkey and water. Allow water to come to a boil and reduce heat to low. Simmer for 15 minutes or until most of the water has evaporated.
  4. Turn off heat and the turkey should appear as coated with spices. See the attached image.
  5. Heat tortillas as per instructions on package. Slice an avocado. Add peppers, onions, turkey and avocado to the tortilla. Top it off with a nice drizzle of ranch dressing and enjoy!
