Recipe: Tim’s Thanksgiving Leftovers Panini

During the holiday season most people have leftovers hanging about in the refrigerator. I made these yummy, cheesy and gooey paninis out of Thanksgiving leftovers. A plain ol’ turkey sandwich is great but a warm flavorful panini sure hits the spot. These paninis are loaded with turkey, stuffing, cranberry sauce, cream cheese and cheddar. I’ve layer the panini in such a way so that all flavors meld together for maximum taste bud pleasure.

Instructions
  1. Lay out two slices of bread. Spread cream cheese first and then cranberry sauce on each slice. Warm up cranberry sauce and stuffing in the microwave.
  2. Next add the following items on each slice in order. Start with turkey, stuffing and finally the cheddar cheese.
  3. Place the opposite slice on top of each panini. Press down on the paninis lightly with ones hands. This will make sure the insides are held together. Spread 1 tbsp of butter evenly on the outside of each top slice.
  4. Heat a griddle or large skillet to medium heat. Place each panini, buttered side down in the pan. While the bottom is browning, add butter to the top of the opposite slices. Turn over after about 3 minutes or until golden brown. Do the same for the opposite side. The cheese should be melted and gooey.
  5. Remove from heat and cut panini in half. Serve with a side of soup and/or potato chips.
