I am a huge fan of Thanksgiving leftovers. I also love Mexican inspired food. I made this hefty plate of nachos with leftover dark meat turkey and piled it high with nacho favorites. Family and friends always want to visit ones house for dinner and now they’ll visit for the leftovers alone! This recipe is super simple and doesn’t take long at all. One can find an awesome cheese sauce recipe here. Store bought nacho cheese will suffice but the homemade stuff is much better. An oven roasted turkey isn’t just for carving and sandwiches right? Try these nachos and explore what one can do with a leftover bird. I hope you all enjoy!

Ingredients
- 1 tbsp turkey drippings
- 1 cup turkey shredded dark meat recommended
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp cumin seed
- 1 tsp chili powder
- 1/2 tsp ground chipotle pepper
- 1 cup water
- 1 small tomato, diced
- 1/4 cup red onion, diced
- 6 olives, sliced
- 1/2 avocado, diced
- 1/4 cup jalapeños, sliced I prefer to use the jalapeños in jars or cans for nachos.
- 1/2 cup cheese sauce
- 2 large handfuls favorite tortilla chips
- 1/4 cup 2% greek yogurt

Instructions
- On a cutting board, cut turkey slices into fine shreds and set aside.Mix spices together in a small bowl.
- In a large skillet set to medium heat, add turkey drippings until melted and hot. Pour spices (no salt) into drippings and heat until fragrant. Be sure to mix spices well with the drippings. Add in shredded turkey, salt and water. Reduce heat to low and simmer for 10 minutes or until most water has evaporated.
- Once water has evaporated, mix turkey around with a wooden spoon to ensure all turkey is flavored evenly.
- Layer the nachos on a plate. Start with the chips, turkey, cheese sauce, jalapeños, onions etc. Top it off with a dollop of 2% greek yogurt or sour cream and dive in!
