Recipe: Mixed Berry Stuffed French Toast

Great mornings often start with a great breakfast. This mixed berry stuffed french toast recipe is a fantastic treat that everyone should try.  I used hand cut, 1 inch thick slices of sourdough bread that soaked up all the creamy, custardy french toast mixture like a sponge.  I stuffed the middle with a fantastic mixed berry and cream cheese filling.  I topped off this breakfast star with additional mixed berries, powdered sugar and lots of pure maple syrup. My guest were pleased and satisfied and I’m certain yours will be too.

Instructions
  1. In a large mixing bowl, whisk together eggs, half & half, vanilla, cinnamon, nutmeg and tbsp sugar.
  2. In a small mixing bowl, combine cream cheese, milk, lemon zest and juice using a spatula. Add 1/2 cup of mixed berries and gently mix into the cream cheese mixture.
  3. Transfer french toast batter to a shallow baking dish. Soak each piece of bread in batter for at least to minutes per side. Gently apply pressure to the bread as it soaks with ones finger tips. This action will help the bread absorb the batter.
  4. Using a griddle or large skillet set to medium heat, melt 1 tbsp of butter. Place bread on griddle and fry until golden brown on each side (about 3 minutes per side).
  5. Preheat an oven to 180 degrees to keep french toast slices warm until ready to serve.
  6. Place 1 piece of french toast on a plate, spread cream cheese mixture over the top. Place another slice on top of the cream cheese mixture.Top the stacked french toast with powdered sugar, remaining mixed berries and pure maple syrup.
