This ultra moist meatloaf is stuffed in the center with melted Swiss, spinach and garlic. Forget about the old-fashioned dry, brick of a loaf that one may be used too. This is such a filling and warming meal which is especially helpful during the brutally cold winter months. Serve with mashed potatoes and a green vegetable for a complete meal thats easy on the budget.

Meatloaf
- 2 cups fresh spinach washed
- 2 lbs 85% ground beef
- 4 garlic cloves, minced
- 1 yellow onion minced
- 2 large eggs
- 1 cup plain bread crumbs
- 1/2 cup milk
- 1 tsp ground cumin
- 1 & 1/2 tsp salt
- 1 cup swiss cheese, grated
- 2 tbsp extra-virgin olive oil
- non-stick cooking spray
Glaze
- 3/4 cup ketchup
- 1 tbsp sriracha
- 2 tbsp molasses
- 1 tbsp yellow mustard

Instructions
- Preheat oven to 350 degrees.
- In a medium skillet set to medium heat, add olive oil and sauté garlic for 5 mins. Add in spinach and cook till wilted. Set aside.
- In a large mixing bowl add ground beef, onion, spices, salt, eggs, bread crumbs and milk. Combine meat mixture thoroughly using hands.
- Spray a loaf pan with non-stick cooking spray. Place half of the meatloaf mixture in the pan. Using ones hands press the meat to form a well to hold the spinach and cheese. See the example in photo.
- Place half of the amount of Swiss cheese on the bottom. Next add the spinach and garlic on top. Finally add the remaining cheese on top evenly.
- Use the remaining meat mixture to top off the loaf. Make sure that all sides and corners are sealed so that the cheese does not escape. Lightly press down on the meat to hold it together. See the example.
- Evenly top the loaf with half of the glaze.
- Place the loaf pan on a baking sheet and bake for 45 minutes.
- Remove from oven and add remaining glaze. Return to the oven and bake for an additional 30 minutes.
- Remove from oven and let rest for 10 minutes. Carefully remove the meatloaf from the loaf pan and place on a cutting board. Slice and serve.
