This recipe is a treat for gnocchi fans everywhere. Theres many recipes and variations of gnocchi with brown butter and sage but I wanted one with a little more zip. I incorporated hot Italian sausage into this traditional favorite. If heat isn’t a favorite, one can use sweet sausage instead. I left this comfort classic elevated and it certainly will satisfy ones taste buds. Make homemade gnocchi by using the recipe that can be found here.

- 32 pieces gnocchi Find recipe for gnocchi at timsnykitchen.com
- 6 tbsp salted butter
- 8 leaves fresh sage
- 2 links Italian Sausage casing removed (hot or sweet)
- pecorino romano or parmesan for topping
- 1 tbsp extra-virgin olive oil

Instructions
- In a medium skillet set to medium heat, add sausage (removed from casing) in quarter in dollops and fry until browned and cooked through.
- In a large skillet set to medium heat, add butter, melt and allow to heat for 1 minute. Add gnocchi to the skillet and fry until golden on all sides. Add sage and let the butter change color to a light brown. Work the gnocchi and sage around with a wooden spoon. Lower heat a little if needed. Be careful NOT to burn the butter.
- Add the pre-cooked sausage to the gnocchi, butter and sage. Heat until sausage is hot.
- Plate the gnocchi with sage and sausage. Spoon up any left over butter in the skillet and drizzle over the top of the gnocchi. Finish the dish off with a nice sprinkle of pecorino romano or parmesan.
