Recipe: Garlic Dill Pollock with Sun-dried Tomatoes

If one is looking for a healthy seafood dish thats low cost and does not skimp on flavor; well look no further! This pollock dish is simmered in coconut oil, garlic, lemon juice and white wine. The herb and spice combination is excellent. One can pair this dish with a side of steamed broccoli or green beans.  When I served this dish everyone was asking for more. I bet your seafood lovers will do the same.

Recipe: Garlic Dill Pollock with Sun-dried Tomotoes
A light and healthy pollock dish recipe that tastes wonderful.
  1. In a large skillet set to medium heat melt coconut oil or butter. Add in minced garlic and cook for about 3 minutes. Add wine, lemon juice, herbs and spices. Allow to simmer for 1 minute.
  2. Reduce heat to medium-low and add pollock filets to the skillet. Cook for 2 minutes per side or until flaky.
  3. Remove pollock from the skillet and set aside.
  4. Turn up the heat to medium-high and add 1 tsp of corn starch to the wine, garlic and herb mixture. Stir continuously until sauce has reduced and thickened. Make sure the sauce is thick but thin enough to spoon over the fish.
  5. Plate the fish and spoon over sauce over the top. Garnish with sliced sun-dried tomatoes, serve hot and enjoy!
