Fig and Goat Cheese Salad
An easy/flavorful healthy salad that contains dried figs, spinach, goat cheese and more.
Salad and Dressing
  1. In a medium bowl, toss together spinach, radicchio, and figs. Set aside.
  2. In a small bowl whisk together olive oil with balsamic vinegar. Add the vinaigrette to the above salad and toss. Add salt and pepper to taste.
  3. Place salad in a bowl, add in brown sugar glazed pecans, and sprinkle the top with fresh goat cheese crumbles. Enjoy!
Brown Sugar Glazed Pecans
  1. Place a skillet on the stovetop at medium-low heat. Melt butter and add brown sugar. Stir with a wooden spoon until combined.
  2. Add in chopped pecans, roast and combine with the sugar/butter mixture. This should take about 3 minutes. One will smell the pecans roasting. Be careful not to burn them.
  3. Set aside, allow to cool and serve.
