Recipe: Chocolate Chip Pecan Cookies

I enjoy chocolate chip cookies, especially when baked with pecans.  These cookies are soft and moist in the center with a light crunchy exterior.  This recipe will make 3 dozen cookies; enough to share with family and friends.  I hope this recipe finds it way to your kitchen and puts smiles on many faces.

  1. Preheat oven to 375 degrees. Roast chopped pecans in oven for 7 minutes. Remove from oven, let cool and set aside for later.
  2. In a medium size mixing bowl combine flour, salt and baking soda. whisk together and set aside.
  3. In a large mixing bowl add butter, white sugar, brown sugar, honey, vanilla and 1 egg. Beat with a hand mixer until smooth and then add the remaining egg. Mix until smooth. Start incorporating the flour mixture a little at a time into the bowl. Beat together using the hand mixer.
  4. Using a wooden spoon add in the dark chocolate chips, pecans and fold together by hand.
  5. Line a cookie sheet with parchment paper. Scoop about 1 tbsp size portions onto the cookie sheet. One should be able to fit 12 cookies. Bake for 10-12 minutes.
  6. Remove from oven, let cool for 10 minutes and enjoy!
