Ingredients
- 2 tbsp coconut oil
- 1/4 cup red curry paste
- 1 pound NY Strip Steak, sliced Be sure to slice steak against the grain.
- 1/2 pound fresh green beans
- 1 cup coconut milk unsweetened
- 1 cup canned pineapple chunks Drain chunks before using.
- 1 red bell pepper, sliced
- 1 & 1/2 cups chicken stock
- jasmine rice optional for serving

Instructions
- Slice steak against the grain and 1 red bell bell pepper length wise.
- In a large skillet set to medium heat, add coconut oil and red curry paste. Stir curry paste until fragrant. Add sliced steak and brown for 2 minutes.
- Add red bell peppers to the skillet. Using a wooden spoon, occasionally work around the peppers and the steak for 3 minutes.
- Add green beans and pineapple to the skillet.
- Incorporate coconut milk and chicken stock. Bring to a rapid boil and reduce heat to low. Simmer uncovered for about 15 minutes or until green beans are tender.
- Serve over jasmine rice while hot and enjoy. If using rice, cook via the instructions provided on package. Most rice packages suggest the amount of rice to use per serving size.
