Apple Cider Braised Chicken Thighs with Brussel Sprouts, Bacon, Apple and Thyme

This dish is simply amazing.  I used a lot of fall favorites in this one.  Ingredients like apples, apple cider, brussel sprouts etc make a wonderful seasonal flavorful combination.  This dish is also very healthy and simple to make.  Its also a favorite because I get to use my cast iron skillet!

Apple Cider Braised Chicken Thighs with Brussel Sprouts, Bacon, Apple and Thyme

Instructions
  1. In a large skillet cook bacon over medium heat until crisp and remove from the pan. Reserve the bacon drippings in skillet. Place chicken thighs, skin side down, and cook 10 minutes or until browned. Turn the chicken over only once and brown the other side then remove from skillet.
  2. Add apples to the skillet and cook 3 minutes or until slightly browned on both sides. Remove the apples from skillet and set aside. Drain the drippings from the skillet. Add spiced apple cider, thyme, mustard, and salt to skillet. Scrape up any browned bits with a wooden spoon. Bring to boil and then reduce heat.
  3. Return chicken to skillet. Cover and simmer 12 minutes. Now add the brussel sprouts. Cover and cook 10 minutes or until tender. Add apples at the end and heat covered for an additional minute. Be careful not to let the apples get mushy.
  4. Spoon the reduced cider mixture over top and sprinkle with the crispy bacon. Serve hot.
