Instructions
Yogurt Sauce
  1. Combine all sauce ingredients in a small bowl and refrigerate for at least 1 hour. It’s much better if it sits overnight.
Persian Frittata – Kuku Sabzi
  1. Dice 1 large shallot and mince garlic clove and set aside.
  2. Finely chop all of the herbs required for the recipe and set aside.
  3. Half all of the cherry tomatoes. Save them for later.
  4. In a medium skillet heat up extra virgin olive oil on medium low heat. Add the diced shallot and cook until almost translucent. Add the minced garlic into the skillet and cook until lightly browned. Make sure to add the garlic later so it will not burn.
  5. In a medium size bowl add eggs, and whisk in turmeric and baking powder. Add in the remaining ingredients and mix until incorporated.
  6. Spray a 6 inch baking dish with cooking spray. Carefully add in the egg mixture.
  7. Bake in the oven at 350 degrees for about 20 minutes. DO NOT dry the eggs out. Remove from oven once done and let sit for about 10 minutes. Cut into squares, serve will tomatoes on the side and drizzle with the yogurt sauce you made earlier. DELICIOUS!
