One of many foods that scream warm weather is the beloved lobster roll. The key is to keep the flavors simple yet vibrant. The lobster is the star so one shouldn’t overpower it with many additional flavors. I’ve added little things like fresh lemon juice and a dash of Old Bay Seasoning. The coleslaw and heart healthy avocado added both texture and that ‘fresh’ taste one wants on a warm day. I hope you all enjoy this recipe, indulge and have fun in the sun.

Ingredients
- 3 1lb lobsters, steamed Tip: Ask your local supermarket to steam them for you. Place in a bowl of iced water to chill when you arrive home.
- 1 tsp old bay seasoning
- 4 tbsp butter, softened
- 1/4 cup mayonnaise
- 1 dash worcestershire sauce
- 1 stalk celery diced
- 1 stalk chopped scallion
- 1/2 lemon juiced
- 4 hot dog buns, New England style
- 1/2 cup favorite coleslaw Go with a slaw with a mayo base as mustard may be too over powering.
- 1/2 avocado sliced

Instructions
- Chop lobster meat into bite sized chucks. In a large bowl combine chopped lobster meat, mayo, old bay, celery, scallion, lemon juice and worchestershire sauce. Mix until everything is combined. Place in a refrigerator and let sit for 30 mins.
- Place butter on each white side of the rolls. Using a griddle set to medium heat, brown rolls on each side.
- Place about 2 tbsp of coleslaw on the bottom of each roll.
- Stack on chunks of lobster meat on top of the coleslaw.
- Place a slice of avocado onto 1 side of each roll and serve.
