What happens when one incorporates chorizo, nacho cheese tortillas, queso, jalapeños and cheddar? A double decker grilled cheese sandwich that was inspired by the Southwest but produced in the Northeast. If one enjoys a good quesadilla, one will fall in love with this grilled cheese masterpiece. Serve with sour cream and warm salsa for a real fiesta of flavor.

Ingredients
- 6 slices french peasant bread
- 6 tbsp butter
- 1/2 cup shredded cheddar
- 1/2 cup shredded mexican queso
- 1/4 cup pickled jalapenos
- 1/4 cup crushed nacho cheese tortilla chips
- 4 tbsp extra-virgin olive oil
- 1/2 large red onion diced
- 2 chorizo sausages, diced

Instructions
- Peel the casings off the sausage links as best you can and dice chorizo and half a large red onion.
- Heat extra virgin olive oil in a large skillet set to medium heat. Add chorizo, onions and cook till sausage is brown and onions translucent.
- Butter two slices of bread and place on a griddle set to medium low heat. Lightly brown both sides of the bread and set aside.
- Lay out two slices of bread onto a clean surface. Sprinkle the queso cheese evenly on each slice followed by the fried chorizo and onions.
- Top the bread slices with the browned bread that was set aside and carefully smush the sandwich down so everything holds together.
- Sprinkled the cheddar cheese on top of the sandwich followed by jalapeños and a dash of cheddar covering the jalapeños. Cover each sandwich with the remaining slices of bread. Carefully smush down the sandwich.
- Butter each side of the sandwich and place on a griddle set to medium heat. Brown each side of the sandwich. Be extra careful while flipping it over.
- Serve hot with salsa on the side for dipping.
